Mutton Masala to review
Ingredients
- 1/4 kgmutton
- 1/2 cupcurds
- 5 flakesgarlic
- 1/4 tbspcoriander powder
- 1 tbspgaram masala
- to tastesalt
- to tastechilli powder
- 1 tbspghee
- 1/2 cuphot water
Instructions
- Mix together curds and spices and beat well.
- Put in mutton and marinate for 4 hours.
- Heat 1 tbsp ghee, fry garlic till red in colour.
- Put in mutton along with the marinade and 1/2 cup hot water.
- Cover tightly and put cold water on the lid; cook till the mutton is tender and completely dry.
- Fry till mutton turns red.
Title reads 'Mutton Masala'. Cold water on the lid is a stove-top steaming/braising trick.
