Mutton Masala to review

Ingredients

  • 1/4 kgmutton
  • 1/2 cupcurds
  • 5 flakesgarlic
  • 1/4 tbspcoriander powder
  • 1 tbspgaram masala
  • to tastesalt
  • to tastechilli powder
  • 1 tbspghee
  • 1/2 cuphot water

Instructions

  1. Mix together curds and spices and beat well.
  2. Put in mutton and marinate for 4 hours.
  3. Heat 1 tbsp ghee, fry garlic till red in colour.
  4. Put in mutton along with the marinade and 1/2 cup hot water.
  5. Cover tightly and put cold water on the lid; cook till the mutton is tender and completely dry.
  6. Fry till mutton turns red.

Title reads 'Mutton Masala'. Cold water on the lid is a stove-top steaming/braising trick.
